I wanted to share this lunch with you. I have been trying to eat more veggies lately and salads are an easy way. I love to chop it all up small and put a ton of different things in it. This one has the wild mix of greens plus Swiss chard, celery, cucs, cabbage (green and purple), green onions, red, yellow and orange peppers, cilantro (a fave), corn, homegrown tomato's, pumpkin seeds, dash of kelp, Bragg's cider vinegar, amino acids, garlic and olive oil. Yummmmm! I often throw in some black beans too. This is so good I should probably use a spoon so as not to miss a thing!
